Các chất gây ô nhiễm dấu vết trong thực phẩm vừa gây ra các bệnh lây truyền qua thực phẩm vừa đe dọa nghiêm trọng đến sức khỏe con người. Các chiến lược phân tích chính xác, nhạy cảm và hiệu quả là cần thiết để đảm bảo an toàn thực phẩm. Các vật liệu nano dựa trên kim loại, dựa trên carbon hoặc khác đã được sử dụng trong các chiến lược phân tích khác nhau để cải thiện an toàn thực phẩm. Tiến bộ đáng kể đã được thực hiện trong việc tinh chế các nền mẫu thực phẩm phức tạp, phân tích các tín hiệu mới và hiệu suất của các phương pháp hiện có. Các công nghệ mới nổi dựa trên vật liệu nano này phát huy tối đa các ưu điểm của vật liệu nano và cải thiện độ chính xác, độ nhạy, mức tiêu thụ thời gian và sự thuận tiện của việc kiểm tra an toàn thực phẩm ở các mức độ khác nhau. Lần tái bản này nhằm mục đích tóm tắt các kết quả nghiên cứu mới nhất về các công nghệ mới nổi để thử nghiệm an toàn thực phẩm dựa trên các vật liệu nano khác nhau, nhằm thúc đẩy sự phát triển hơn nữa của các công nghệ liên quan đến phân tích an toàn thực phẩm.

Abstract:

Trace contaminants in food both cause food-borne diseases and seriously threaten health in humans. Accurate, sensitive, and effective analytical strategies are necessary to ensure food safety. Metal-based, carbon-based, or other nanomaterials have been used in various analytical strategies to improve food safety. Significant progress has been made in the purification of complex food matrices, analysis of new signals, and performance of existing methods. These emerging technologies based on nanomaterials give full play to the advantages of nanomaterials and improve the accuracy, sensitivity, time consumption, and convenience of food safety testing to varying degrees. This reprint aims to summarize the latest research results on emerging technologies for food safety testing based on various nanomaterials, in order to promote the further development of food-safety-analysis-related technologies.
