Đề tài “Nghiên cứu lên men nước nho từ nấm kefir” tập trung khảo sát quá trình lên men nước nho bằng hệ vi sinh vật trong kefir nhằm tạo ra sản phẩm đồ uống lên men có giá trị dinh dưỡng và lợi khuẩn cao. Nội dung bao gồm lựa chọn nguyên liệu, xây dựng điều kiện lên men (nhiệt độ, thời gian, tỷ lệ kefir), và đánh giá các yếu tố ảnh hưởng đến chất lượng sản phẩm như pH, hàm lượng đường, acid hữu cơ, hương vị và mật độ vi sinh vật. Kết quả nghiên cứu góp phần phát triển sản phẩm đồ uống lên men tự nhiên, tốt cho sức khỏe và đa dạng hóa sản phẩm từ trái nho.

Abstract:

The project Research on the fermentation of grape juice from kefir mushrooms focuses on investigating the fermentation process of grape juice with the microbiome in kefir in order to create fermented beverage products with high nutritional and probiotic value. The content includes the selection of raw materials, the formulation of fermentation conditions (temperature, time, kefir ratio), and the evaluation of factors affecting product quality such as pH, sugar content, organic acids, taste, and microbial density. The research results contribute to the development of natural, healthy fermented beverage products and diversify grape products.
