Tài liệu tập trung nghiên cứu giá trị dinh dưỡng của trái cây và rau quả, đặc biệt là quá trình tích lũy, điều hòa và bảo tồn các hợp chất hoạt tính sinh học. Nội dung chú trọng các chất chuyển hóa thứ cấp và hợp chất chống oxy hóa như axit ascorbic, hợp chất phenolic, carotenoid và glucosinolate, với quá trình sinh tổng hợp chủ yếu liên quan đến con đường phenylpropanoid. Sự tích lũy các hợp chất này chịu ảnh hưởng của loài, giống hoặc kiểu gen, điều kiện canh tác, môi trường, bảo quản, đóng gói và xử lý sau thu hoạch. Tài liệu đề cập vai trò của hormone thực vật trong quá trình sinh trưởng, chín và lão hóa, đồng thời trình bày tiềm năng của nghiên cứu phân tử, chuyển hóa học, phiên mã và cải tiến di truyền trong nâng cao và duy trì chất lượng dinh dưỡng của nông sản.

Abstract:

This volume examines the nutritional value of fruits and vegetables, focusing on the accumulation, regulation, and preservation of bioactive compounds. Particular attention is given to secondary metabolites and antioxidants, including ascorbic acid, phenolic compounds, carotenoids, and glucosinolates, whose biosynthesis is closely associated with the phenylpropanoid pathway. The accumulation of these compounds is influenced by plant species, genotype, agronomic practices, environmental conditions, storage, packaging, and postharvest treatments. The volume also discusses the roles of plant hormones in fruit and leaf senescence and nutritional changes during development and ripening. Advances in molecular biology, transcriptomics, metabolomics, and genetic improvement are considered as tools for enhancing bioactive compound accumulation and maintaining nutritional quality throughout the production and distribution chain.
